Dinner Rolls

1/4 c warm water
1 T active dry yeast
pinch of sugar
1 c milk
1/4 c shortening
1/4 c sugar
3/4 tsp. salt
1 egg
4 to 4 1/2 c flour

Dissolve yeast and sugar in water. Scald milk, shortening, sugar and milk; then cool to luke warm (works well in microwave). Add yeast mixture and mix. Add the egg and mix well; then add flour. This will be a very soft dough, may be too soft to knead on a wooden board. Beat the dough with a wooden spoon unitl smooth and elastic.

Place in a greased bowl and turn once to coat top. Rise till double. Punch down and shape.

Place on greased pan or baking sheet. Cover and allow to rise until light and almost double. Back at 375 until golden brown.
